Challenge:: Don't Eat Out!

So C is gone again, flying his plane around somewhere. In the month of June, he will have spent 15 days TDY out of 30. This clearly makes for a happy Abby.

Anyway. We are going to focus on the positives of C being out of town.


And by that, I mean I don't have to worry about making super tasty but  healthy dishes that will be good for me points wise and yummy for him. I don't have to hover over his shoulder while he cooks to see exactly what goes into the meal so I can calculate it on the WW app on my phone to make sure I have enough points for the day. And most importantly......I don't have to look up menus online before we go out to eat to see if there is anything I can eat on the menu!!

So, while I also LOVE eating out (it's not solely his fault!), I am going to take advantage of these 9 days (only 3 left now!) of him being gone to eat in! I try really hard when I go out to be honest about how much I eat and to cut portion sizes and unhealthy add ons whenever possible. I managed to sit at the local Mexican place and ONLY eat my tacos while the beans and rice on my plate went untouched.

But regardless of how disciplined I am when I eat out, the fact remains that I don't really know the food I am eating. It is likely higher in fat and sodium, and if I made the same meal for myself at home, it would probably be healthier simply by using fat free and low sodium ingredients.

So while he is gone, I am going to challenge myself to eat in! I will let you know how it goes.

180th Post! Get ready for a Giveaway!

New Habits!

C sent me an article the other night about sleep and how it effects weight loss. At this point, since I did GAIN a pound last week, I am definitely interested in seeing how I can make all around life changes to be healthier, as opposed to just focusing on what I am eating and working out.

So as a new challenge to myself, I am going to go back to basics.....I am setting a bed time!

I haven't had a bed time since high school, and I'll admit.....that was one of the most liberating things when I went to college! My parents didn't care much about my bedtime in high school, but it just felt.....odd to be up past 11 pm. If I stayed up doing a paper or something, and was awake past midnight, it felt like the middle of the night. Now, midnight is when I get ready for bed.

I also shower at night. So that means I need to dry my hair before I go to bed. So when I don't shower until midnight, I don't go to sleep until usually 1 am. Then, I wake up around 8:15 and am super grouchy. I do much better with at least 8 hours of sleep.

So, the new plan is going to in bed by 11 pm and wake up by 7:30 am. I don't have to be at work until 8:30 am, but I could do.....uhhh.....all kinds of things in the morning? To be honest with you, I have no idea what I would do in the morning. I am normally up 15 minutes before I need to be at work. Maybe I will start showering in the morning with all my spare time! Or packing healthy breakfasts!

WW and Training Update!

Well, another week of WW is done. This week I gained a pound.....boooo! But I am pretty sure I know why I gained this week, so hopefully next week will be a much better loss!

As for training, I am two weeks down! I am keeping up with the distance, but not with the running like today, I ran probably 2 miles and walked 3  miles total. I was supposed to run 3 miles. I am going to keep pushing hard. C drove around with me today trying to map out routes that will work when I get up to longer runs. Luckily, a spot near his house provides space for me to run up to about 9 miles on really quiet back roads that don't get used very often.

I am a bit disappointed in myself, since I haven't been able to run the whole runs. But I know myself and my body, I am really slow and it takes me a little while to build up my distance. I am just going to keep pushing until I make it!

Oh, and Happy Father's Day today to my awesome faja and all the other fathers I know!! How I got the best dad ever, I don't know :) But I'll take it!

Time Flies

So somehow, C and I have survived each other for 4 years happily :) Our anniversary is actually in September, but we met 4 years ago today, probably right around this time.

I was coming from a wedding with a group of my friends, and we all went to our friend Eric's house for his graduation party after the wedding. I thought I was looking pretty hot in my dress, and I saw this random guy I didn't know. I had heard of him, though, because he and my brother have the same name. I got introduced to him, but didn't pay him a lot of attention.

As the night wore on, he kept drinking with Eric's dad while the rest of us didn't really drink as much haha. By the time we retired to the O-Club (Eric's basement), he and I were chatting up a storm. We talked about how much we loved dogs and hated cats. That is all I really remember about that conversation :)

He made a bit of an impression on me, but nothing crazy. Then, that week, we all went camping at Assateague Island. Camping at Assateague is basically a drunken time, and I got to see many sides of C.....the side that ran into an RV, the side that tried to run into the ocean in the middle of the night and had to be tackled by Eric (who probably weighs.....60 lbs less than C), and the side that got mad when we all tried to prevent him from falling into the fire pit. Basically, I thought he was an alcoholic :)

I'm just kidding. He was drunk a lot, but we all were. I didn't know what would happen after that week when we hit it off, and thinking back on it now, it gives me butterflies to remember how smitten I was. He didn't know, though, cause I played it VERY cool :)

I sometimes can't believe it's been 4 years! SO much has changed in that time. Two rank advancements, 5 moves, and a job title (PILOT!) for him. Graduating school, living on my own, having a real job, and moving to Texas for me. I am so happy that we have grown together. We met when I was 19 and he was 22, and people do a lot of changing in their early 20s. But lucky for us, we are now 23 and 26 and still loving each other.

I also can't believe that 4 years ago, I thought it would be a good idea to get into a long distance relationship with no foreseeable end! I wouldn't change it now, so I guess I can be thankful for being young and naive :)

Training Update: A week down!

Well, as of Monday, I had completed a week of my half marathon training!

I started off last Monday with a 2 mile run. Tuesday was 1 mile, Wednesday was a stretch day, Thursday was a stretch, Friday was 2 miles, Saturday stretch, Sunday 2 miles, Monday stretch, and today 2 miles!

My times have slowly gotten a bit better and my endurance has definitely gotten better. It is just miserable to run in this Texas heat! C and I purposely wait until after 9 pm, once the sun has gone down, to go for our runs. It was still around 95* when we went tonight at 10 pm!

I am planning to run the Disney Princess Half Marathon in Orlando in February with a bunch of my fellow military girlfriends and spouses. I am ridiculously excited to meet these lovely ladies, as we all originally met on a message board for military girlfriends and wives. Some I have met in person and some I have just known for 3 years online, so getting together to run this race is going to be great!

But that means I need to stay focused and keep on trucking! Tomorrow is a rest day, and then back out on Thursday!

(I also need new shoes, so C and I are going to trek into Dallas this weekend to find a running store!)

First Mini Goal!

Well, my first 3 weeks of Weight Watchers are finished!

It was a tough 3 weeks, because let's face it, I love eating. And before WW, I never really thought about what was going into my mouth. Now, I think about every crumb that goes into my mouth and log it online.

And today, with my 3rd weigh in, I reached my first mini goal ---- 5% of my original weight! I am super excited to reach my next mini goal, which is going to be 20 lbs lost! Slow but steady, right?

And this is about 15 lbs above my goal weight.....

And, if I keep up at this rate, I can reach my goal weight by the time I go home to try on my dress for Kathy's wedding. That is really my goal, because I want the dress to fit right and if I reach my weight loss goal, it is going to take a lot of alteration. 50 lbs worth of alterations! Plus, when they ordered the dress, they ordered it to my largest hips. So the top is already going to be about 3 sizes too big (that is before any weightloss).

I am feeling good. I feel slimmer and healthier.  I feel more attractive. And I feel empowered by my success to keep going.

So off I go to make some eggs for breakfast.

New Toy! (and 74. Buy a nice camera!)

I got a new toy!!

I have been eyeing DSLR cameras for a long while, thinking it over.

I took photography classes in high school and used my Dad's manual film camera from the 70s. It was so much fun to take my own pictures, develop the film, and print my own prints from negatives. I have some awesome black and white pictures.

A lot of thought has gone into this purchase, because even entry level DSLR cameras aren't cheap! I also didn't want to buy a super entry level camera and then want to upgrade really quickly.

I ended up going with the Canon Rebel T2i.

I don't get it until tomorrow, when Best Buy gets their shipment in. But I can't wait to get started! I am also reading Understanding Exposure, which was recommended by some photographer friends. The camera has automatic settings, but I want to learn how to use it in manual mode, where I think I will get the best pictures.

Half Marathon Training

Due to some AMAZING inspiration in the form of my friend Jamie (over at Jamie Loves), I have decided to finally bite the bullet and start training for a half marathon.

I did my best running when I had a training plan and a goal I was shooting for. Once I lost the plan (Couch to 5k) and reached the goal (running a 5k with my Dad), I kind of fell off the wagon. Not entirely....I can still run, but it's not pretty. And it's super short.

So last night, after the sun went down, C and I began my half marathon training! It is just too hot here to run during the day, so for now, since the runs aren't too long, I am going to be running at night. I bring C as my bodyguard :P (some bodyguard......he literally runs laps around me)

Jamie shared with me the running schedule that she was given when she started doing TNT (Team in Training.....check it out!). It takes about 4 months, but it starts off nice and slow! So last night I started with a 2 mile run. I'll be has been a LONG TIME since I ran two miles (without stopping!). I was pretty proud of myself. Tonight is a 1 mile run, which should be a breeze after my two mile trek last night!

C also worked with me on some stretches. This schedule has rest/stretch days, and I want to make sure I am doing good stretches. I LOATHE stretching. I get so bored, and because I don't do it, I am not at all flexible. So he gave me some good ideas for stretches I could do!

Now the next question is......what half marathon do I want to do? At this rate, I am set to finish training in October, which will mean it might finally be getting cool here. I want to run a half for charity, not just for kicks and giggles, so I have to do some research.

Any ideas for charitable half marathons??

More Food? Yes please.

Another Weight Watchers recipe! 

C loves jambalaya. Normally, we make it from a Zataran's box with sausage. So when I saw this healthier version, using chicken and shrimp, I got very excited.

This is supposed to make 4 servings, approx 2 cups each. 11 WW points. It was so filling!! Instead of italian seasoning, I used cajun seasoning. I think seasoning wise, I am going to keep playing around with different spices. But I really liked the base of it. I would also suggest trying petite diced tomatoes, cause the stewed tomatoes were a little bit big. 

I doubled the recipe cause there were 3 of us and only 1 of us cares about adhering to serving size (ME) haha. But MAN did I have leftovers! And next time, I think I won't cook the rice into it. I will just have the jambalaya and rice to put the jambalaya on top of.


2 tsp olive oil
1 medium onion(s), sweet, chopped (about 1 cup)
1 medium green pepper(s), chopped (about 1 cup)
8 oz Chicken, breast, raw, without skin & bone, cut into bite-size pieces
29 oz canned stewed tomatoes, undrained
12 oz shrimp, peeled and deveined
1 tsp italian seasoning, dried
1 tsp hot pepper sauce
4 cup(s) cooked brown rice

  • Heat oil in a large nonstick skillet over medium-high heat. Add onion and pepper; cook, stirring, until crisp-tender, about 5 minutes.
  • Stir in chicken; cook, stirring, until chicken is no longer pink, about 5 minutes.
  • Stir in remaining ingredients, except rice; bring to a boil. Reduce heat; simmer, stirring occasionally, until shrimp are cooked through, about 5 minutes.
  • Stir in rice; continue cooking until liquid is almost absorbed and rice is thoroughly heated, about 2 minutes. Yields about 2 cups per serving.

Yummy Eggs

I had nothing good to eat last night in my apartment, but I refrained from Taco Tuesday at the local Mexican place with C. I decided I would just have to get creative with what I had!

And man, did I strike gold! My mom has often told me to try salsa with my scrambled eggs, but I never have. I decided to scramble up one whole egg and one egg white last night (I hear egg yolks aren't good? haha who knows). I tossed in some Old Bay (for those who are not familiar with Old Bay, go buy a can RIGHT NOW) for flavor, but I felt like it was going to be boring. So I glanced around my fridge for something fun to add.

I saw the salsa and figured, Hey why not? But instead of garnishing my eggs with it after they were cooked, I just dumped it into the pan with the raw eggs and scrambled it all together, probably about a tbsp of Tostito Mild Salsa.

I was super skeptical after I made that impulsive looked pretty gross. I was afraid the salsa would keep the eggs from scrambling like they should have. was DELICIOUS! The eggs scrambled up just as they should have, and the extra juice from the salsa just cooked off. Once I took a bite, I knew I was hooked. It was SO GOOD! I use Mild Salsa for my wimpy taste buds, but I am sure the effect for those with spicy taste buds would be just as delicious with the eggs.

And the best part?? Only 2 Weight Watchers points!! I had a hot dog with it, so it all filled me up, but I figured I could also do it with bacon on the side, or some fruit to fill me up. I could also try two egg whites instead of one, to get some more egg out of the deal. Either way, it was DELICIOUS!
